The Accommodation – A truly boutique stay in one of the state’s finest heritage buildings

Standing tall on an expansive block, with water fountains and manicured gardens boasting almost every kind of fruit, herb and vegetable, this stylish escape is close enough to the action (a mere 10-minute drive to Hobart city centre), yet provides a blissful sense of tranquility. Twelve boutique rooms are spread across the three levels of this stately lodge, with each room inspired by prominent figures in Tasmania’s history. These include architect Henry Hunter, who designed notable public buildings, schools and private residences in Tasmania (with Maylands existing as one of his last commissioned works); John Pearce, a Hobart merchant for whom Maylands was built in 1887; and the Brownell brothers, who established Brownells department store in Hobart (Augustus Spencer Brownell purchased Maylands from the Pearce family in 1912).
The onsite Restaurant Deodara showcases the very best of seasonal paddock-to-plate dining, and its guiding philosophy is to grow, forage and source produce from small local growers or the onsite gardens. The menu is ever-changing to reflect the hyper-seasonal approach, but sample dishes include spanner crab with wasabi leaf and shallots, beetroot-cured ocean trout, and braised beef cheek with celeriac, confit shallot, crisp carrot and saltbush.
