2016 Shiraz

• This 2016 Shiraz is deep red in colour with a black core and a bouquet of charcoal chocolate notes with dark plum and mocha, finishing with soft velvety tannins and rich opulent fruit on the palate. While drinking beautifully now, you may wish to put it away in the cellar for another five years or so during which time it will soften further and become a little more complex. We recommend that it be carefully decanted 2-3 hours prior to serving to allow the wine to breathe and to leave any sediment behind.

2016 Cabernet Sauvignon

• This limited release is our best Cabernet of vintage and the mild conditions experienced in 2016 have accentuated the varietal characteristics. The colour is deep, leading to a bouquet of violet and cassis and a touch of dark chocolate. The palate shows the substance of Australian Cabernet Sauvignon and finishes with great length- a wine of great breeding which can be cellared with confidence for another 5-8 years.

2016 Merlot

• Deep red-black colour with a dark centre with a bouquet loaded with spicy plum and chocolate notes and the palate is typically firm, rich and with a long finish which is a legacy of the low yielding vineyards of South Eastern Australia. This is certainly a wine that will benefit from a few years of careful cellaring if so desired.
